Saturday mornings in Loveland have their own pace. Coffee's on, the dog's restless, and someone's already pulled up a trail on their phone. You need food for the road — real food, not something that'll fall apart in your pocket or turn into a sticky mess in the sun.
We started making these no-bake energy bites a couple of summers ago and they've become one of our regular Saturday things. Five ingredients, no oven, ready before your coffee cools down. And they travel well, which matters when you're actually going somewhere.
What Goes In
One cup of rolled oats, half a cup of peanut butter or almond butter, a handful of dark chocolate chips, and a little shredded coconut if you have it. The binder is the good part: a GoodLeaf CBD + CBG + CBN Honey Stix — 27mg ($2 each). Tear the straw, squeeze it in, stir until everything holds together. That's it.
The honey is clover-based, infused with CBD, CBG, and CBN isolates. It tastes like honey. No herby aftertaste, no weird bitterness — just a little sweetness that pulls the whole batch together.
If you'd rather use a spoonful than a straw, the GoodLeaf Honey Jar — 1000mg, Peach or Strawberry ($45) works the same way. About one tablespoon equals a honey stix. It's the version to keep in your kitchen if you're making these regularly through the summer.
How to Make Them
Mix everything in a bowl until it holds its shape. Too dry? Add a splash of water or a little extra honey. Roll into balls about the size of a walnut — you'll get around 12 from this batch.
Refrigerate for 30 minutes. That's when they firm up and the flavor comes together. After that, they keep in the fridge for about a week. In practice, they're usually gone by Wednesday.
Good for Colorado Days
These hold up in a pack pocket or a small cooler for a few hours, which makes them genuinely useful around here. Horsetooth, Carter Lake, a long loop up in the mountains — they're the kind of snack that doesn't require any thought once you've made a batch.
They're not a meal. They're just a smart thing to grab between actual meals when you're moving around all day. A couple of these and a cold Rocky Mountain Soda ($2.50) and you're covered for a few hours on the trail.
Honey stix are at the counter — $2 each, seven flavors. Stop by before your next adventure. We're at 677 E. Eisenhower Blvd. in Loveland, open Monday through Saturday, 11am–6pm.
